BEHIND THE SMOKE

Our maple-smoked flavor starts in the woods. We cut sugar maple during northern Michigan’s early-spring sap run, then split and season it until it’s ready for the smoker. The result is a clean, gently sweet smoke that brings out the best in our fish and house-made pâtés.

Our whitefish, lake trout, walleye, perch, and bluegill come from the cold, deep waters of the upper Great Lakes. We smoke them over 100% sugar maple wood for our smoked fish and house-made pâtés, and we also serve local catches flash-fried for our popular carryout menu.
